i found this so easy ice cream recipe from karen cheng's website. simple ingredients. simple procedures. ice cream maker not required.
i wanted to make it the minute i read the post, but i always forgot to get this or that when i do my weekly grocery shopping. i only need 2 ingredients yet i always forget. i know, i'm getting old...
i got my ingredients from aldi. 600mL full cream. 375 (or 395? i forgot) mL can of condense milk - i only use 1/2 of the can because it was noted she used 200mL and it was still sweet. i didn't put vanilla essence because i couln't find it in my pantry.

this is what comes out of it. doesn't it looks nice?
but... as the title suggested, it's hard rock! i had to get it out to room temperature for about 10 min (in the cool sydney summer weather) for it to soften so it's scoopable.
perhaps i didn't whip the cream long enough. i was worried overwhipping and ended up with a bowl of butter.
but my kids love it! i love the looks of their faces. the most satisfying look. :)
i think i'll try light cream next time. even though i love full cream it still feels too much. and i'll use even less condense milk because it's too sweet.
