
do you still remember prettymom's lazy kitchen series? probably not. i don't have that many recipes to share. i only cook on weekends and i virtually cook almost the same thing every weekend! my poor hubby and kids...
recently i'm into different kind of healthy eating. and start to cook different things.
i'm never into healthy eating because food classified as healthy do not appeal me. i love fat food. i love butter. i love cream. i love chicken skin. yes, all the no-no's.

my love, 梅菜扣肉 - mustard veggie pork belly. see the fat? it melts in your mouth. yum! i love it, but always eat with guilt.
now, fear no more. after being told that animal fats are good for you, i am sold! i started to do some research and found a different kind of belief most of the food not on the conventional healthy food are what we need.
in this diet (not in terms of loose weight but in terms of well being) we have to eat lots of meat and veggies. minimal carbohydrate. no wheat. no vegetable oil. no dairy (but you can have unpasteurized milk products) of course there are other things but i'm only mention things that i can somehow follow.
since i'm not an expert i won't go into too much detail because i could misunderstand some of the things. i did some google research based on i heard. i take what i like and of course i could filter some essential information.
back to topic. this is lots of meat and veggie but not much noodle recipe.
what you need

minced pork, of course. about 700g. i chose the fat mincd pork. lean minced pork is so tasteless and more expensive!

i don't know what it's called in english. it's a type of fungus. it comes in dry and expands to something soft in texture when soaked in water.

some fresh veggies.

taiwan xinzhu rice noodle. there are many brands and they're the same to me. this particular package is 500g and is too much for us (family of 4). i prefer the ones with 350g or 400g.
what to do
- soak the rice noodle in water
- marinate minced pork with soy sauce, sugar, salt, pepper and chinese cooking wine (optional)
- chop fungus and mix with minced pork
- heat pan with peanut oil. add minced pork until cooked. add veggies and cook until slightly soft.
- add about a rice bowl of water.
- drain rice noodle (from step 1) and add to the pan. lightly mix everything in the pan.
- cover the pan for about 2-3 mins.
- mix again until all rice noodle becomes soft.
since i like veggies crunchy, i prefer to soak them in boiling water for about 20 secs and set aside and add them when the noodle is ready.
serve!
in about 10 minutes...

i like eating it with chilly sauce / oil. sometimes i like to add vinegar if it's not enough taste.

this is my favorite chilly oil. a must have with noodle soups!
